I'm looking for a gluten-free stuffing recipe.
I have a couple, it just depends on whether you want to use a bread based, or a rice based stuffing.
For a bread based stuffing I love cornbread! You can bake 2 GF cornbread mixes(Bob'sRed Mill or buy the fantastic Whole Foods GF Bakehouse frozen cornbread (2 or 3 trays), then crumble it up and toast it in the oven at 250F for about half an hour to get it dried out and crisp. Or you can do the same thing with a GF white bread (I buy Katz GF challa because it is more bread like than other white breads) or UDI's or French Market brand. This recipe is my families favorite stuffing recipe! I had to reform it to make it gluten-free. You'll need:
8-10 cups bread, toasted,and crumbled(for cornbread) or diced before toasting if gf challa or white)
1-2 large onions, diced
4 stalks celery, diced
2 sticks butter, melted in a big pan
1 lb GF ground sage flavored sausage (I use Jimmy Dean)
2 eggs, scrambled
1 lage can Swanson's chicken broth
2 tsp. poultry seasoning
2 tsp onion powder
black pepper
salt to taste
Optionals:
1 apple, peeled and diced (I've made it both ways and I liked both)
OR
3 cups sauteed mushrooms, cooled (Mushrooms go fantastic in this stuffing!)
Place your cooled stuffing into a large bowl, and add the seasoning.
Melt 2 sticks of butter in a pan and cook the onions and celery until soft and translucent, then brown the sausage ,and cool (they have to be cooled so the eggs dont cook when you add it to the stuffing). Add the eggs, and mix again, then add half of the chicken broth and let sit for about 2 minutes then stir well again. Test the stuffing to see if it's moist enough, by taking a palmful and squeezing, if it sticks together then it's wet enough. If not wet enough continue adding stock until wet, and it holds together.
If stuffing your turkey, use a spoon to gently place the stuffing into the bird (dont smash or press to hard on the stuffing, it will expand while cooking), and put the rest into a buttered baking dish and bake for 35 minutes at 400F or until nicely browned on top. This makes enough stuffing to stuff a 15-18lb turkey and makes a 8x8 baking dish too. Makes 10-12 cups. 12 servings.
Rice stuffing is always gluten free so you would make around 10 to 12 cups of real Basmati rice (it's the best tasting rice and stays fluffy). Then follow any rice stuffing recipe that you think would taste good. Try the website, allgoodrecipies.com for many choices of rice stuffings. :)

I subscribed to "Living Without" magazine. It is an easy read. And so muchmore. It also helps you understand the breakdown and helps you convert your old recipes, into the ones that work for you needs. Even if you have mulitiple allergies to a lot of foods. Also,if you subscribe,they send you on line recipes, plus...I hope this was helpful.
