You can make your own accommodations when you homeschool. If the book says, "write your answers in complete sentences." But your child does better answering orally, you do it your way. When I girst started homeschooling in 1997, it was hard to find a curriculum that was not religious, or even, judt not offensive to my religion. Now, there are a plethora of secular choices. I settled upon Laurel Springs Curriculum my first year, for the reasons you have said. That was many years ago, I don't know how it has changed since then. I don't use a boxed curriculum anymore. My kids and I write their own curriculum, based on what they desire to learn. There really isn't a magic formula about what your child needs to learn and when. Scope and sequence is not something that keeps me up at night.
I’m not sure for your state but i would for sure connect your state homeschool organization for help. As for curriculum or ideas, our daughter’s tutor has a student that its mom is using Easy Peasy Homeschool. They have facebook page anf one for special needs. From what I know its national so they have groups for just your state or high school kids.
