GFCF Kids has been my favorite resource: http://health.groups.yahoo.com/group/GFCFKids/

I am from the Berkshires, (other coast!), but I have done this with my own son. We tried only changing one thing at a time, starting with bread, and it went ok. I gave him plenty of notice of what I was doing, had him involved in every step from the start, and that helped a lot. We come from a food oriented family so everyone was involved in helping with this. I also found it helpful to be involved in some cooking classes. Warren took over some of them himself and is doing better with trying new things on his own.
