I can only kinda help on the food thing ...
There's a book called something like "Just Take a Bite" that has some good info in it. What helps with my daughter is to put something she usually will eat (yogurt, turkey, mac n cheese, etc.) on a plate with what I want her to eat or try. Usually that ensures she will eat the thing she usually eats (like the yogurt or turkey) and raises the possibility she will try the other thing. Also, if she sees another kid eating it she is more likely to try. I also have her taste by licking the food or touching it with her finger and then licking her finger. That's how she discovered honey, and now she asks for it on sandwiches.
First thing you will find out with Tricare is you have to get ALL your referrals redone. New base, new referrals! Tricare has also changed their Autism Care, as of July 25,2013. You should read about that on Autism Speaks web site. Also you need to make sure that area has Autism care, or you could be without care. We were without care for more than 2 years because of where we were stationed. Also if you get referrals in Wisconsin, when you finally move to be with your husband, you will have to go through the referral process again! Just because you are in TLF does not mean your child will go without care. You can get all his therapies as they are not home based, except ABA therapy and then you may be able to work with the therapist and get them to still come to you. Some of the bases offer some Autism therapies, others do not. Your best place for info is your gaining base's EFMP office. (exceptional family member program) they can also explain the ECHO program to you. All this can be done from a DSN line so you don't have to pay for overseas calls. Also another place for good information is family support at your current base and your gaining base.
As far as the food goes, it's normal. Don't stress about it. Feed him what he will eat and offer other foods to see if he will try but don't get discouraged if he doesn't try.
It is not unusual for ASD kids to "lose" certain foods. My son stopped eating mac and cheese in the middle of a meal, and never went back.
Many times, you will be able to try new foods that they did not previously eat. (When we lost mac and cheese, we gained cheeseburgers, which was a complete surprise.) Also, keep an eye on vitamin and mineral shortages. (Kids who are short on iron might suddenly lose their taste for everything besides meat.)
At worst, you may have to resort to rewards. We give our son cereal (a preferred food) in exchange for eating fruit (which he suddenly does not like).
I can't tell you much about the housing issue. Most kids will do OK with a few months off of therapy, but only if you are able to fill in some of the work yourself. Sine you have a one-year-old, you might want to choose whatever location where you can get the most support.
A friends child started eating only goldfish and something else. Took him to the dentist, he had 7 cavities, after dental service, he is eating like a big dog! I know my son has some dental issues as well, and I'm wondering if it might be partial problem with his lack of verbal skills.
