What do you encourage for independent play. Be have drawing and puzzles down but can't seem to find anything else she'll take interest in. She's almost 3 and electronics are not an option at this time.

Musicial instruments is a thought. I'd love for her to learn to play something. :)

puzzles are great...why do you need something else if that is working? get some harder puzzles...or mix up the puzzles you have. At just three many children only have a couple of independent activities they will go to. Musical instruments are another good one. Try expanding the drawing to tracing/copying different pictures from books maybe?
