When gluten free was "the thing" years ago I tried it. The food was nasty and disgusting. A few years ago my daughter asked me to put her brother on a gluten free diet. Now many upper end grocery stores offer gluten free products. You can get pizza, cookies, breakfast bars, bread, pasta etc. all gluten free. My son can't tell the difference. My son had very loose bowels is entire life. He now has "normal, formed" bowel movements. For my son, that's the only difference.

I really would like to try one for my ASD daughter as well but she is such a carb junkie!
