For the coloring we tried outlining the picture with a few different colors. Maybe 2 or 3. Also the coloring page was very basic. Not a lot to color. Not too busy. Only put on table the 2 or 3 colors and coloring page. My daughter gets too overwhelmed if the picture is too detailed or involved or if there are too many colors to choose from. We had to pick the colors and outline most of it then let her choose just one small piece to pick the color. This has worked very well. She was just overwhelmed but actually enjoys coloring. We just had to approach it differently. Slowly she has started coloring on her own.

Have you tried different art mediums to see if he might have a preference? Our son preference is painting he likes the way he can mix colors, he also does color but we put alot of work in doing different types of creative projects with him and still do, if we have activity books he prefers to do mazes, Connect the pictures and the work in the book and will ignore coloring, when he does color he likes to keep it practical (trees are not purple the sky is not rainbow, a bear is brown or black, we also noticed he enjoys connect the dots and or color photos that have patterns so a follow along have you tired those before ? Our son also avoids writing if he can, has struggled to properly hold a pencil properly and if he has a peak interest then will write so we go after those, like if theres a monster, character or specific interest your son has print off photos of that to color, for practicing writing, make a game of it like "name all the Pokémon let's try to write the names out as well!
