I am thinking of homeschooling my 3 year old. I don't know how to start or when. Has anyone done this and how did you go about starting and did you keep up with it.

I homeschooled my son prior to his 3rd birthday (September) until January of this year while I was fighting for his rights within the public schools. He had a diagnosis at 2 years and 6 months of age, so he recieved speech, OT, and ABA before he turned 3 yrs old thr. However, when I had the official IEP meeting with the public school special education team prior to his birthday they were nowhere near coming close to meeting his needs.
The issue was resolved through a mediation meeting with the Department of Education to receive the education that they recommended in the first place. The outcome of the advocating is beyond the scope of my response to your post however, I wanted to expand on how I arrived at homeschooling in the first place.
Before my son started going to a private school for children with autism, I homeschooled him utilizing a combination of different curriculums. I started off with a preschool plan inspired by the Emilia Reggio approach and then continued to add bits and pieces of other lesson plan ideas as time went on such as ABCmouse.com, Gemiini discrete video modeling system, and Leapfrog Academy subscription for when he would request his Ipad with signs or the initial sound of "ttttaaa".

With a 3 year old, maybe start with some flash cards and picture books. The dollar stores have some great stuff.
Contact your school district for help with resources, and maybe local mothers/parents club?
